Pachamanca is a traditional Peruvian dish. Meats such as lamb, pork and chicken are marinated in a blend of spices and baked on hot stones. Watch Chef Pio Vasquez de Velasco of El Huacatay prepare the marinade for the meats, using deveined peppers, puréed with vinegar and mustard. Other produce such as potato, green lima beans, sweet potato and occasionally cassava or yuca, and corn, tamales, and chill is included in the baking.
