Preparation

Vegetables Preparation (Roasting)
20 minutes- In a mixing bowl combine all ingredients and toss very well.
- Arrange the ingredients in a food pan.
- Preheat the oven to 450F. Roast the vegetables for 7-10 minutes until light brown. Set aside.

Dressing Preparation
5 minutes- In another mixing bowl, combine all ingredients and mix well.

Dish Assembly
10 minutes- Combine the cooked penne, vegetables, and dressings. Toss until well mixed, and dressing coats the pasta and other components well.
- Plate in serving sizes.
- Garnish with parmesan cheese and basil.
