  • Parmesan Cheese 200.0 g
  • Fresh basil leaves, chiffonade 15.0 g
  • Penne Pasta, cooked 1000.0 g

Preparation

  1. Vegetables Preparation (Roasting)

    20 minutes
    1. In a mixing bowl combine all ingredients and toss very well.
    2. Arrange the ingredients in a food pan.
    3. Preheat the oven to 450F. Roast the vegetables for 7-10 minutes until light brown. Set aside.
  2. Dressing Preparation

    5 minutes
    1. In another mixing bowl, combine all ingredients and mix well.
  3. Dish Assembly

    10 minutes
    1. Combine the cooked penne, vegetables, and dressings. Toss until well mixed, and dressing coats the pasta and other components well. 
    2. Plate in serving sizes. 
    3. Garnish with parmesan cheese and basil.
