Cook the Chicken Halang-Halang


A bold and aromatic dish from Visayas and Mindanao, chicken halang-halang is a coconut-based stew similar to tinolang manok, but with a fiery twist. Lemongrass and chilies infuse the broth with heat, true to its name meaning “spicy-spicy.” Add it to your rainy season menu – or keep it a year-round comfort food staple.

Preparation

  1. Prepare the Chicken

    • Season chicken pieces with Knorr Chicken Powder. Set aside to marinate.'
    • Heat oil in a pan over medium heat.
    • Cook chicken pieces just until they change color. Set aside.
  2. Cook the Chicken Halang-Halang

    • In the same pan, sauté garlic until soft.
    • Add ginger and onions and cook until translucent.
    • Add chicken pieces, lemongrass, red chilies, and water. Bring to a boil.
    • Add Knorr Chicken Broth Base, Knorr Liquid Seasoning, and fish sauce.
    • Once boiling, add green papaya or sayote. Simmer for 15 minutes.
    • Add coconut milk. Bring to a boil. Lower heat and simmer for 20 minutes or until the chicken and vegetables are cooked.
    • Season with black pepper and serve hot.
    • Tips: You can also add basil leaves, malunggay, or dahon ng sili to make the dish more nutritious.
