Marinated Tuna Panga (Tuna Jaw)

  • Tuna Panga, washed 3000.0 g
  • Garlic 100.0 g
  • Black Pepper, ground 5.0 g
  • Canola Oil 60.0 ml

Sweet Soy Glaze

  • Garlic, chopped 100.0 g
  • Canola Oil 30.0 ml
  • Butter 60.0 g
  • Water 120.0 ml
  • Black Pepper 3.0 g
  • Cornstarch Slurry 30.0 ml

Grilled Tuna and Assembly

  • Garlic, fried 5.0 g
  1. Marinated Tuna Panga (Tuna Jaw)

    10 minutes
    1. In a large food pan, combine all ingredients.
    2. Mix well then cover in plastic wrap and put in chiller for 24 hours.
  2. Sweet Soy Glaze

    10 minutes
    1. In a medium sized sauce pot, sauté the garlic in oil until light brown.
    2. Add the remaining ingredients and simmer for 2 minutes.
  3. Grilled Tuna and Assembly

    55 minutes
    1. Pre-heat the griller for 15 minutes.
    2. Grill both sides of the tuna for about 8 to 10 minutes per side.
    3. After grilling, baste the tuna with the glaze.
    4. Garnish with fried garlic.
    5. Serve while it's warm and enjoy!
