Preparation

  1. Cook the Beef Pares

    • Place all ingredients, except the cornstarch slurry, in a pressure cooker. Cook beef until fork tender.
    • Remove mushrooms and slice. Set aside.
    • Remove beef and shred. Set aside.
    • Stir in the slurry to thicken the sauce.
    • Combine beef, mushrooms, and sauce in a bowl.
    • Set aside until ready to assemble.
  2. Make the Ensaladang Talong

    • Combine all ingredients in a bowl. Mix well.
    • Season to taste with Knorr Chicken Powder and pepper.
    • Set aside until ready to assemble.
  3. Prepare the Garlic-Spring Onion Crema

    • Combine all ingredients in a bowl. Mix well.
    • Transfer to a bottle.
    • Set aside until ready to assemble.
  4. Assemble the Tacos

    • Lay a tortilla on a flat work surface.
    • Top tortilla with shredded beef pares and ensaladang talong.
    • Drizzle garlic-spring onion crema on top.
    • Garnish with cilantro and calamansi.
    • Repeat with remaining components.
