A hearty Ybanag dish from Cagayan Valley, bitsuelas is a slow-cooked stew of pork hocks, ribs, tomatoes, and white beans. Some bitsuelas recipes add chorizo and ham for extra richness and depth. Serve this comforting dish with warm rice for a deeply satisfying and memorable meal.

Preparation

  1. Prepare the Bitsuelas Meats

    • Place pork hocks and ribs in a pot. Cover with water. Boil for 5 minutes.
    • Strain and wash off all impurities from the pork. Return hocks and ribs to the pot.
    • Add bay leaves, pepper, and Knorr Pork Broth Base.
    • Cover with water and bring to a boil. Lower heat and simmer for 1.5 hours or until tender. Add water occasionally to keep the meats covered.
  2. Cook the Bitsuelas with Pork

    • Heat oil in a deep pan.
    • Sauté garlic until slightly browned.
    • Add onion and ginger. Cook until soft.
    • Add tomatoes and sauté until dry.
    • Add fish sauce, pepper, tomato paste, chorizo, and white beans.
    • Cook for 5 minutes, then add the pork broth. Boil until the liquid is reduced to half.
    • Add meats and simmer for another 15 minutes.
    • Season with Knorr Liquid Seasoning.
    • Transfer to serving bowls and garnish with spring onions.
