Marination

  • Chicken Thigh Fillet 1500.0 g
  • CoconutVinegar 60.0 g
  • Annatto Oil 50.0 ml

Grilling and Assembly

  • LemongrassWhite Stalks, chopped 100.0 g
  • Ginger, chopped 50.0 g
  • Calamansi, juiced 50.0 ml
  • Black Pepper, ground 2.0 g
  1. Marination

    5 minutes
    1. In a mixng bowl, combine all the ingredients and mix very well.
    2. Cover the bowl with plastic wrap and marinate inside the chiller for 24 hours.
  2. Grilling and Assembly

    45 minutes
    1. Assemble the chicken in the skewer.
    2. Preheat the griller for 15 minutes.
    3. Grill the chicken 6 minutes per side or until done.
    4. Plate the dish. Serve with coconut vinegar, soy sauce and chicken oil.
