A Mindanao classic, chicken pastil features shredded, spiced chicken served over rice and wrapped in banana leaves. Once a breakfast staple, it’s now enjoyed all day for its bold flavors and affordability. Paired with palapa – a fiery mix of wild garlic leaves and chilies – this dish delivers intense flavors with minimal effort and deep cultural roots.

Preparation

  1. Prepare the Chicken

    • Place all ingredients in a pot.
    • Bring to a boil and simmer for 30 minutes or until chicken is tender.
    • Strain and reserve the cooking liquid.
    • Let chicken cool, then shred.
  2. Cook the Chicken Pastil

    • Heat oil in a pan over medium heat.
    • Sauté garlic until fragrant.
    • Add onions and cook until soft.
    • Add coconut cream and boil until it starts to curdle and release its oil.
    • Add shredded chicken, red chilies, turmeric, and pepper. Sauté until dry.
    • Season with Knorr Chicken Powder and Knorr Liquid Seasoning.
  3. Assemble the Chicken Pastil

    • Cook rice in the reserved cooking liquid.
    • Spread margarine on a banana leaf. Arrange rice in the center. Top with chicken pastil. Wrap tightly.
    • Serve with palapa on the side.
