Preparation

  1. Simmer the Whole Chicken

    • Place all ingredients except the chicken in a large pot.
    • Bring to a boil and mix well.
    • Boil for 10 minutes to infuse the liquid with seasoning and aromatics.
    • Add the whole chickens to the boiling liquid.
    • Boil for 5 minutes, then lower heat to a gentle simmer.
    • Simmer for 40 to 45 minutes until the internal temperature reaches 75°C.
    • Remove chicken from the stock and cool completely.
    • For best results, cool the chicken in the stock overnight.
  2. Deep Fry Until Golden and Crisp

    • Heat oil to 190°C in a deep fryer.
    • Deep fry the whole chickens until very crispy, about 20 minutes.
    • Remove and drain excess oil before cutting or serving.
  3. Assemble and Serve

    • Portion crispy fried chicken onto serving plates.
    • Serve with sweet potato fries on the side.
    • Add banana ketchup as a condiment.
