Cook the Humba

Prepare the Rice Burger

  • Cooked Short-Grain Rice 1500.0 g

Make the Cheese Foam

  • Cooking Cream 200.0 ml
  • Cheese Melt 200.0 g
  • Cilantro, finely chopped 3.0 g

Assemble the Rice Burger with Humba

  • Kimchi 200.0 g
  • Atchara 200.0 g

Preparation

  1. Cook the Humba

    • In a large bowl, combine pork, Knorr Liquid Seasoning, garlic, black pepper, bay leaves, white vinegar, and canola oil. Marinate for 30 minutes.
    • In a large pot, sear the pork until browned.
    • Add sugar, black beans, star anise, Knorr Oyster Sauce, and water. Simmer for 45 minutes or until the pork is tender.
    • Add slurry, as needed, to thicken the sauce.
  2. Prepare the Rice Burger

    • Fill a round mold with cooked rice.
    • Sear the rice in a hot pan to keep its shape.
    • Repeat with remaining ingredients.
  3. Make the Cheese Foam

    • Combine all ingredients in a saucepan. Simmer for 2 minutes.
    • Let mixture cool.
    • Transfer sauce to a cream whipper or espuma canister, charge, and shake. Set aside until ready to assemble.
  4. Assemble the Rice Burger with Humba

    • Place humba, rice, cheese foam, kimchi, and atchara in separate containers.
    • Serve to guests and allow them to assemble their own burgers.
