Preparation

  1. Make the Lechon Kawali

    • Combine water, Knorr Pork Broth Base, fish sauce, onions, and bay leaves in a pot.
    • Bring to a boil. Lower heat to simmer.
    • Add pork belly and simmer until fork tender.
    • Remove pork belly from the liquid and transfer to a wire rack placed over a sheet tray.
    • Puncture small holes in the skin and wipe off the juices.
    • Roast pork belly in a preheated 330ºF oven until the skin is dried and crispy.
    • Portion pork belly and deep-fry until the skin blisters.
    • Slice pork into medium-dice portions. Set aside.
  2. Prepare the Kare-Kare Sauce

    • Heat atsuete oil in a pot.
    • Sauté onions, garlic, and tomatoes for 5 minutes.
    • Stir in the fish sauce, Knorr Beef Broth Base, Knorr Pork Broth Base, lemongrass, and bagoong. Cook for 2 minutes.
    • Pour in water and bring to a boil. Simmer for 15 minutes.
    • Remove lemongrass stalks. Transfer the mixture to a blender. Process until smooth. Return the sauce to the pot.
    • Stir in peanut butter and season with Knorr Chicken Powder and black pepper.
    • Place atsuete seeds in a strainer and submerge lightly into the sauce to adjust color.
    • Thicken kare-kare sauce with cornstarch slurry.
  3. Cook the Turmeric Rice

    • Heat the oil in a pan and sauté the onions and garlic until they are fragrant and translucent.
    • Add the rice to the pan and cook for 1 minute, stirring constantly.
    • Stir in the bagoong, KCB, and turmeric powder until well combined.
    • Pour the water into the pan and stir in the chicken powder.
    • Transfer the mixture to a rice cooker.
    • Press the button on the rice cooker and cook the rice until done.
  4. Assemble the Burrito

    • Warm flour tortillas in a pan.
    • Lay a tortilla on a flat work surface.
    • Place turmeric rice and lechon kawali cubes in the center. Drizzle kare-kare sauce on top.
    • Layer vegetables on top.
    • Fold, wrap, and seal into a burrito. Slice, if desired. Repeat with remaining components.
    • Serve with more kare-kare sauce on the side for dipping.
