Cook and Freeze the Sorbet Base

Compress the Mixed Melons

  • Assorted Melon, deseeded and cut 600.0 g
  • Water 300.0 g
  • Sugar 200.0 g
  • Vanilla Bean 2.0 pc

  • Vodka 250.0 ml

  • Prepared Compressed Melon
  • Flaming Vodka

This lime slush dessert combines bright citrus with a smooth watermelon gulaman sorbet and dramatic tableside flambé. Designed for advance freezing and fast plating, it delivers refreshment, visual theater, and clean portion control for modern dessert menus.

Preparation

  1. Cook and Freeze the Sorbet Base

    • Combine water, watermelon juice, sugar, and Carte d’Or Clear in a pot.
    • Bring to a boil while stirring until fully dissolved.
    • Remove from heat.
    • Add egg whites and mint leaves.
    • Blend until smooth.
    • Strain for a clean base.
    • Transfer to Rowzer containers and freeze.
    • Process frozen base in the Rowzer machine until smooth.
    • Hold sorbet at -8°C until service.
  2. Compress the Mixed Melons

    • Combine water, sugar, and vanilla bean in a pot.
    • Bring to a boil, then allow to cool.
    • Place melon pieces in vacuum bags.
    • Pour cooled syrup over the melons.
    • Vacuum seal and chill for 24 hours.
    • Slice into desired pieces.
  3. Prepare the Flaming Vodka

    • Warm vodka gently just before service.
    • Ignite carefully for tableside presentation.
  4. Assemble and Flame the Dessert

    • Arrange compressed melon in a serving bowl.
    • Scoop watermelon gulaman sorbet on top.
    • Ladle flaming vodka over the dessert.
    • Serve immediately.
