Pork Ribs 1.0 kg

Black Pepper, crushed 10.0 g

Fish Sauce 40.0 g

Oyster Sauce 10.0 g

Sugar 40.0 g

Water 100.0 ml

Potato Starch 100.0 g
Before Serve

Unsalted Butter 60.0 g

Curry Leaves 20.0 g

Chilli Padi, sliced 20.0 g

Honey Corn Flakes 40.0 g

Spring Onion, julienned 20.0 g

Sugar 10.0 g
Preparation

Pork Rib Marinade
- Marinate pork ribs with all other ingredients – black pepper, fish sauce, oyster sauce, sugar, water, potato starch – for 4hrs.

Before Serve
- Heat up oil in wok, deep fry pork ribs for 5mins.
- Strain off and set aside for later use.
- Heat up wok, melt butter, sauté curry leaves and chilli padi.
- Add in pork ribs, chicken seasoning powder, sugar, salted egg powder and corn flakes.
- Toss well in wok and serve immediately.
- Garnish with julienned spring onion.
